The loaf pan overflowed even though I only filled it less than 3/4 full of the mixture. You're thinking: wow that was really smart of you to put it on a cookie sheet. That's what I did After I had to clean up the mess that was all over the bottom of the oven, but that was easy enough. Good thing I checked on it right when I did.
In the end I was able to get a loaf of banana bread that actually looked decent. The right shape, color, texture, moisture. Amazing!!

2 cups flour (wheat for me)
1.5 teaspoons of baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon of ground nutmeg
2 beaten eggs
1.5 cups of mashed bananas (5 medium)
1 cup sugar
1/2 cup of cooking oil or melted butter/margarine
1. preheat oven to 350. grease bottom of loaf pan.
2. combine flour, baking powder, baking soda, cinnamon, nutmeg, and 1/4 teaspoon salt
3. in medium bowl combine eggs, bananas, sugar, and oil. Then add egg mixture all at once into the dry mixture, stir (batter will be lumpy).
4. bake for 55 to 60 minutes, put foil over the top during the last 15 minutes to stop browning. cool for 10 minutes, take out of pan and then cool on wire rack.
5. share with someone, it will make their day : ) because this is actually the best banana bread that I've ever tasted.
